The Takeout’s Creshonda A. Smith, writing on 31 December 2024, gives a simple rule for appetizer quantities: plan 4 to 6 pieces per person when a full meal follows, 8 to 10 for a longer evening event and 12 to 15 when appetizers are the main meal. For a Thanksgiving crowd that will sit down to turkey, the lower range is usually enough.
This guide turns that rule into numbers for 10, 20 and 30 guests, adds the timing and food safety advice from a Safeway guide published on 15 January 2025, and suggests dish types. Safeway is a grocery retailer, so I use it for timing rules only. The appetizer ideas are ours. Thanksgiving is on Thursday, 26 November 2026.
How Many Appetizers You Need
The Takeout’s rule is pieces per person. Dips, boards and veggie platters reduce individual portions; it suggests about a quarter cup of dip, or roughly two ounces of meat, cheese or vegetables, per person. The totals below are simple multiplication of its 4 to 6 pieces per person.
| Guests | Pieces if a full meal follows (4 to 6 each) | Pieces if it is a longer party (8 to 10 each) |
|---|---|---|
| 10 | 40 to 60 | 80 to 100 |
| 20 | 80 to 120 | 160 to 200 |
| 30 | 120 to 180 | 240 to 300 |
Thanksgiving appetizers usually sit before a large meal, so lean towards the lower range.
How Many Types
The Takeout suggests about three choices for small groups and four to five types for large events, mixing heartier items such as sliders or skewers with lighter ones such as veggie platters. It also advises easy-to-replenish, crowd-pleasing dishes that suit a range of tastes and diets.
| Type (our ideas) | Examples | Make ahead? |
|---|---|---|
| Cold and light | Veggie platter, cheese board, marinated olives | Yes |
| Hot and hearty | Stuffed mushrooms, mini meatballs | Assemble ahead, bake later |
| Dips | Spinach dip, cranberry cream cheese dip | Yes |
| Handheld | Skewers, pinwheels | Yes |
| Sweet | Spiced nuts, fruit and chocolate | Yes |
Make-Ahead Timeline
Safeway’s guide gives a schedule. Cheese balls and herb dips improve with 2 to 3 days in the fridge, and unbaked items such as cheese balls or pinwheels can be frozen up to one month.
| When (Safeway) | Task |
|---|---|
| 3 days before | Dips, marinated olives, nuts, cheese balls |
| 1 day before | Assemble cold appetizers (leave final garnishes), prep vegetables |
| Up to 24 hours before | Assemble hot items like stuffed mushrooms, cover and refrigerate; add 5 to 10 minutes to baking |
| 2 hours before | Bake hot appetizers and warm dips |
| 30 minutes before | Pull cold items from the fridge and light warming trays |

Hot and Cold Safety
Safeway’s guide says to hold hot appetizers at a minimum internal temperature of 140 F using warming trays, chafing dishes or a 200 F oven with the door slightly open, and to reheat make-ahead items to 165 F. Cold items should stay at 40 F or below until serving, and anything with mayonnaise, cream cheese or seafood should total no more than 2 hours at room temperature, or 1 hour above 90 F.
| Food | Rule (Safeway) |
|---|---|
| Hot appetizers | Hold at 140 F or above |
| Make-ahead hot items | Reheat to 165 F |
| Cold perishables | Keep at 40 F or below |
| Mayonnaise, cream cheese or seafood items | No more than 2 hours at room temperature (1 hour above 90 F) |
| Cold displays | Refresh from refrigerated backup every 2 hours; use ice bowls |
Board and Serving Tips
Safeway suggests removing hard cheeses 30 to 60 minutes before serving and soft cheeses 15 to 30 minutes before. Our addition is to keep appetizers light so guests still have room for dinner. For lighter bites, try our healthy snack recipes.
